Let us make it a hassle-free Thanksgiving.

November 11, 2024     |     Hui Hui Lee, RD/LD

Hello, my friends! I hope November has been treating everyone well!  It is about time for the busy holiday planning. Are you ready (mentally and physically) for this holiday season? If not, it is time for you to catch your breath and start diving into the Thanksgiving preparation mood, such as gathering recipes and ingredients for this Thanksgiving. Do you ever get stressed when the clock is ticking closer to the "BIG" cooking day? Or are you getting bored of the same old Thanksgiving meal? Before you get overwhelmed with the planning, I would like you to remind yourself that Thanksgiving's primary purpose is to express gratitude and thanks and share the celebration with family and friends. Let's simplify our recipes for this year's Thanksgiving and share a nutritious meal with our loved ones.

There are abundant Thanksgiving recipes out there. I settled on one that is easy but delicious. I hope you have fun cooking for your loved ones this Holiday!

Pear Feta Salad with Fig Dressing: This is a flavorful fall salad recipe! The recipe calls for gorgonzola cheese, but I used crumbled feta cheese instead. I will definitely share this pear salad with my family and friends during this holiday season! The recipe is adapted from Feasting at Home.

Fresh Cranberry Sauce: This delicious cranberry sauce has tart cranberries, apple, orange, and maple syrup. Jessica, a friend who does not usually care much about canned cranberry sauce, commented that she loves this version of fresh cranberry sauce. The recipe is adapted from Feasting at Home.

Mushroom Gravy: I love mushroom gravy so much; it is packed with flavor! I highly recommend you try this recipe during this Thanksgiving! The recipe is adapted from Feasting at Home.

Cheesy Mashed Potato with Caramelized Onions: I approached this recipe using the Instant Pot method. It turned out to be super simple but delicious! It is definitely a keeper recipe! Lisa, another friend, commented that this mashed potato tastes great by itself; gravy is not necessary. The recipe is inspired by Half-Baked Harvest.

Vegan-friendly Green Bean Casserole: I used unsweetened soy milk when making this green bean casserole. If I were to remake it, I would definitely try unsweetened nut milk instead. The recipe is adapted from Feasting at Home.

Roasted Butternut: The recipe includes three roasted butternut squash recipes, but I only made two, Roasted Butternut Squash with Persian Lentils and Thanksgiving Stuffing. I have to agree with Slyvia (the writer) that this roasted butternut squash season is better in smaller pieces. The recipe is adapted from Feasting at Home.

Roasted Turkey Breast with Blueberry Balsamic Glaze: If you have a small gathering of two to three people and are thinking of trying a new approach for a turkey dish, this roasted turkey breast recipe is yours to try! It pairs turkey breast with sweet, tangy blueberry balsamic glaze. I love this roasted turkey breast recipe! It is a foolproof recipe, especially for people like me who hardly cook animal protein in bigger chunks.  The recipe is adapted from Feasting at Home.

*The DRH Food and Nutrition department sponsored most of the ingredients used in these recipes.
