Hello, my friend! How’s your March and April been? I have been traveling a lot lately! Where? I went for a 6-week vacation to Malaysia and S. Korea. It was a memorable trip and I had a blast visiting my family! One thing I missed a lot during my vacation was my own cooking! I guess I am so used to my home cooking, after “eating out” for an extended period of time, I craved just a simple home-cooked meal. I am now back to Oklahoma, and am slowly getting easing back into my routine. It sure feels good to be able to prepare my own meals!

This April, let's focus on eating fresh and seasonal spring produce like asparagus, spinach, strawberries etc! The benefits of seasonal eating are (1) the produce at their peak nutritional value and taste better, (2) we pay at lower price, (3) is environmentally friendly (if we choose local) by decreasing food miles and chemical usage during shipping process. When eating seasonally, we get to explore new menus and taste different food each season, to help prevent food boredom and maximize nutrient intake throughout the year!
My friend, it is really simple to practice seasonal eating. We start by picking a few produce options for each season, then try several different recipes of those produce. See, it is as easy as A-B-C, right?
Okay, I think it is time to try some new recipes for our April. Are you ready? The recipes that I am sharing today are foolproof, easy to follow, and most importantly, DELICIOUS!
Mexican Breakfast Burrito Bowl: Tired of same old same old breakfast food? It is time for some Mexican-inspired breakfast burrito bowl served with roasted sweet potatoes, black beans, chorizo (I had vegan chorizo), grape tomatoes, avocado, cilantro, and sunny-side-up egg. Creamy Asparagus Orzo: It is a simple spring recipe. The presentation of the dish might not look appealing, but it is definitely a flavorful dish! It can be served as a side dish, salad, or just simply a meal. I served my asparagus orzo with strawberry spinach salad. The creamy asparagus orzo recipe is inspired by Feasting at Home.

Chana Masala: life is too boring? Need something more flavorful? This Chana Masala recipe is what you need to spice up your day! I have to admit that this recipe calls for quite a bit of ingredients, but the dish tastes like a “bomb” to me!!! I served my chana masala with basmati rice, pickle red onion, raita, and naan. It was the best lunch I’ve had in a long time! I highly recommend this recipe! The recipe is adapted from Feasting at Home.
