What to eat during this HOT SUMMER

Hello friends! How is everyone doing this summer? What have you been doing this summer? No matter what you’ve been doing, I hope you had as much fun as you could over the last few months. I am quite busy trying out some new recipes and sharing good food with friends! One thing I learn about cooking and baking in summer, is that IT DEFINITELY HEATS UP MY HOUSE SIGNIFICANTLY! That’s why a lot of people mentioned to me that they aren't really interested in cooking during summer. So, does it mean we can’t make delicious meals or food during summer? If you have that in mind, please hold that thought. Let me show you some easy meal ideas that work best during this scorching hot summer! Summer is the best time to try some fresh fruits and veggies, such as berries, watermelon, peaches, tomatoes, okras, cucumber, summer squash, and zucchini. Why miss the opportunity to try some fresh fruits and veggies when they are widely available (either at the grocery store or your backyard)?
The foods best for the summer season are sandwiches, wraps, salad, and grilled dishes. Most of them take no effort to put together, but the taste is just divine. Are you ready to get busy making some delicious foods for yourself (and maybe for your friends and family)?

Crispy BBQ Tofu Sandwich: Are you looking for an easy vegan friendly meal for a busy day? Then, this is the best vegan sandwich I highly recommend! This sandwich is made with crispy tofu that is slathered in barbecue sauce, topped with fresh creamy avocado slices and tangy cilantro cabbage slaw. At the time of trying this recipe, I did not have vegan BBQ sauce available at home, so I just went with the regular BBQ sauce. This is a very easy, quick, but yet a delicious tofu sandwich recipe! Grilled Salmon Salad with Avocado Cucumber Salsa: Grilled salmon sounds good to me this summer! For this salad, we paired grilled salmon with avocado cucumber salsa, and romaine lettuce that is lightly dressed with homemade creamy cilantro lime dressing. One thing I will suggest to you (if you were to give the recipe a try), cut the amount of salt added to the salmon to ⅓ of the recipe called for, as I found it too salty! Taiwanese Cold Noodles Salad with Sesame Dressing: Have you tried cold noodle salad before? This cold noodle salad with sesame dressing is sooo refreshing! One Skillet Street Corn Chicken Enchilada Bake: This enchilada bake is superb, packed with a complex blend of flavor! It is wayyy too easy to prep and is great for leftovers! I highly recommend this recipe for you to try! The recipe is inspired by Half-baked Harvest.

Vegan Berry Tart: This creamy tart recipe is definitely packed with summer flavor! It is made with lemon-vanilla filling and gluten-free almond crust, and topped with assorted delicious berries.
